Chia seed pudding

Breakfast, quietly sweetened.

One part chia to four parts milk, left overnight. The syrup goes on at the end rather than into the soak, so it stays a distinct sweetness rather than disappearing into the pudding.

Ingredients

  • ¼ cup chia seeds
  • 1 cup almond milk, fresh milk or water
  • Fruit or nuts, to top
  • Coconut sugar syrup, to drizzle

Method

  1. Stir the chia seeds into the milk.
  2. Leave to soak overnight, or for a few hours at least, until the seeds have swollen and the mixture has set.
  3. Top with fruit or nuts and drizzle the syrup over.
