Three-layer milk tea

Three layers, one glass, all Sarawak.

The drink separates because the syrup is denser than the tea and the tea is denser than the milk. Pour slowly and the three stay where they are put.

Ingredients

Gula Apong syrup

  • 500 g Gula Apong block
  • 250 ml water

Tea

  • 500 ml hot water
  • 3 black tea bags

To assemble

  • Ice cubes
  • Thick coconut milk, fresh milk or cream

Method

  1. Cook the block and water together over a low heat until the sugar has completely dissolved. Set aside to cool.
  2. Bring the water to the boil, drop the heat, and brew the tea bags for five minutes. Leave it strong.
  3. Put five tablespoons of the syrup in the base of a tall glass.
  4. Add ice, then pour the tea in slowly so it settles above the syrup rather than mixing into it.
  5. Top with thick coconut milk, fresh milk or cream.

The block dissolves rather than melts: it needs water and low heat, not direct heat on its own.
